Rolled Cabbage (Serves 4)

Ingredients

  • Genkai Chicken Soup Base1 bottle (600 ml)
  • Cabbage leaves8 leaves
  • Breadcrumbs1 tablespoon
  • Ground chicken (breast)100g
  • Milk2 tablespoons
  • Onion1/2 piece
  • SaltA pinch
  • Carrot1/2 piece
  • Black pepperA dash
Please thaw the chicken soup in hot water before use.

    Trim the thick stems from the cabbage leaves and boil them until tender.

    Finely chop the onion, sauté lightly in a pan, and set aside to cool.
  3. 3

    In a bowl, combine the ground chicken, sautéed onion, breadcrumbs, milk, salt, and black pepper. Mix thoroughly.
  4. 4

    Place the mixture onto each cabbage leaf, roll it up neatly, and tuck the ends underneath.

    Place the thawed chicken soup, carrots, and rolled cabbage into a pot, and simmer gently for about 20–25 minutes.
  6. 6

    Serve in bowls and enjoy with Genkai’s signature ponzu sauce if desired.

White Ankake Yakisoba (Serves 4)

Ingredients

  • Genkai Chicken Soup Base1 bottle (600 ml)
  • Steamed Chinese noodles4 portions
  • Cabbage1/4 head
  • Carrot1/2 piece
  • Shimeji mushrooms1/2 pack
  • Bean sprouts1/2 pack
  • Shiitake mushrooms3 pieces
  • Kamaboko (fish cake)1/4 stick
  • Mixed seafood (thawed)250 g
  • Potato starch25 g
  • PepperTo taste
Please thaw the chicken soup in hot water before use.

    Heat vegetable oil in a frying pan until small bubbles form around a chopstick. Add the noodles and fry until golden brown on both sides. Remove from the pan and set aside.

    In the same pan, add the vegetables and thawed seafood mix. Stir-fry until the vegetables soften, then pour in the chicken soup. Bring to a boil, and add potato starch dissolved in water to thicken.
  3. 3

    Once thickened, pour the sauce over the fried noodles. Sprinkle with pepper to taste and enjoy. The soup is already seasoned, but you may adjust the flavor as you like.

Soup Dumplings (Serves 2–3)

Ingredients

  • Genkai Chicken Soup Base1 bottle (600 ml)
  • Frozen dumplings10–12 pieces
  • CabbageAbout 1/8 head
  • Carrot1/2 piece
  • Leek (or long green onion)1/3 stalk
  • Sesame oilAs needed
  • SaltA pinch
  • PepperA pinch
Please thaw the chicken soup in hot water before use.
Also thaw the frozen dumplings in advance.

    Cut the cabbage into bite-sized pieces and slice the leek diagonally. Peel the carrot into thin ribbons using a peeler. Thaw the frozen dumplings beforehand.

    Pour 600 ml of Genkai Chicken Soup into a pot and bring to a boil. Add the vegetables from Step 1, then reduce the heat to low and simmer gently. Adjust the flavor as desired—the soup is already seasoned.
  3. 3

    Simmer for about 3–4 minutes until the dumplings are heated through. Finish with a touch of sesame oil and pepper to taste before serving.
