Genkai has been dedicated to Mizutaki for over 90 years since its founding in 1928 (Showa 3).
Our signature milky-white soup, carefully refined over generations, is rich in the natural flavor of chicken, collagen, high-quality fat, and well-balanced nutrients. Each sip offers a deep, savory richness and an elegant aroma.

Our menu features seasonal dishes made with the finest ingredients, including Mizutaki Kaiseki and a variety of chicken specialties that reflect the flavors of each season.
The chicken used for our Mizutaki is “Date-dori”, delivered fresh from the fertile lands of the Date region in Fukushima Prefecture, nestled between the Ou and Abukuma mountain ranges.
Enjoy its firm texture and clean taste, free from excess fat or odor.

Mizutaki is a traditional Japanese hot pot dish that originated mainly in Kyushu and the Kansai regions, and is now enjoyed throughout Japan.As its name suggests—literally meaning “boiled in water”—the dish is prepared by simmering ingredients in water to create a delicate broth, enjoyed together with vegetables.
Among various ingredients, chicken is most commonly used, as it releases the richest flavor when cooked in this way.In Tokyo, we believe it was our founder, Hiroo Yano, who first introduced Mizutaki to the city.

Japan’s food self-sufficiency rate stands at 37%; we rely on overseas sources for more than 60% of the food we eat.As of 2022, the agricultural workforce numbered 1.23 million, with an average age of 67.9. It is predicted that if the current trend continues, the number of farmers will drop below 300,000 within twenty years.This is not a distant problem.While the self-sufficiency rate for chicken is 66%, the vast majority of the feed used to raise the birds is imported. If feed imports were to halt, the effective self-sufficiency rate for chicken would plummet to below 10%. The risk that the foods we eat every day might suddenly become unavailable is quietly mounting.Genkai, a restaurant that has been serving mizutaki (chicken hot pot) in Shinjuku for 97 years, could not simply view this issue as someone else's problem.

A gathering to savor the flavors of Genkai, Part Two - Aki Fukakusa Qin Koto Live - Established in 1928 (Showa 3), this single building has stood the test of time. Behind its serene wood grain and dignified atmosphere, a sound resides today. This time, we will be guided by Mr. Masashi Nishioji, who designed the current building of the main branch of "Mizutaki Genkai," We will be hosting a special event featuring Qinqin player Aki Fukakusa.・Profile of Aki Fukakusa Born in Aichi Prefecture in 1949. After graduating from Keio University's Faculty of Law, he began his career as a musician. In 1986, she released her first album as a Qinqin player, titled "Qinqin". In recent years, they have consistently performed using only acoustic sounds, without employing any electronic equipment or microphones. Please enjoy the interplay between the atmosphere of Genkai no Yakata and the live sound of the Qinqin.・Meeting Qin Qin The Qinqin—this instrument, whose name was once unknown and which was decaying, was first encountered by Aki Fukakusa in 1979. From a revelatory encounter at an antique market, he has repaired and tuned instruments himself, building his own unique world of sound. Music credits include insert songs for the NHK Taiga drama "Takeda Shingen," and music direction for Bandō Tamasaburō's stage productions.   1. If you cancel at least 4 days prior to your reservation date, no cancellation fee will be charged.

  2. If you cancel between 3 days and the day before your reservation, you may be required to pay 60% of the course meal price.

  3. If you cancel on the day of your reservation, you may be required to pay 100% of the course meal price.
