The reason Genkai can serve this dish lies in its qualifications. Only restaurants with a poultry preparation license are allowed to purchase whole chickens. The bone-in meat is proof of this. The delicious flavor of the meat that falls off the bone is a taste that can never be achieved by purchasing only individual cuts. Until five years ago, this was Genkai's signature chicken hot pot.
