The reason Genkai can serve this dish lies in its qualifications. Only restaurants with a poultry preparation license are allowed to purchase whole chickens. The bone-in meat is proof of this. The delicious flavor of the meat that falls off the bone is a taste that can never be achieved by purchasing only individual cuts. Until five years ago, this was Genkai's signature chicken hot pot. For those who want to savor the essence of chicken, bone and all.
